Crock Pot Chicken

My husband and I are kind of weird. 

For a lot of reasons actually, but the one I'm focusing on today is that we both don't really like chicken. 

Every once in a while I do try to make some sort of chicken dish in order to change our minds. Those are the days that our son (AKA our dog) is the totally psyched about because he gets the majority of our leftovers. 





So I decided to make crock pot chicken because worst comes to worst our baby gets a couple days of fresh food. I threw together a chicken, a sliced onion, three stalks of celery, four carrots, a couple of potatoes, a head of smashed garlic, steak seasoning, and a beer (not pictured, whoops). 



The result was pretty tasty. We both decided that this was our favorite chicken dish in a while. My only issue with the crock pot was that the chicken ended up a little pasty. In hindsight I should have totally expected that outcome. But that easily fixed by putting everything in a pan and popping it in the over under the broiler for a couple of minutes. 

Love that crispy brown skin! 


Crock Pot Chicken

Ingredients

3-5 lb chicken
1 onion, chopped
3 stalks of celery, cut in half
4 carrots, cut into two-inch pieces
2 potatoes, cut into one-inch pieces
Steak seasoning to taste
12 oz beer

Directions

1. Place the first five ingredients into the crock pot.
2. Rub the steak seasoning on the chicken, inside and out.
3. Pour the beer around the chicken.
4. Cook on low for 4-8 hours depending on the size of your chicken. Use a thermometer.
5. Once the chicken is fully cooked transfer to baking dish and put under the broiler for 5 minutes or until the chicken is golden brown.
6. Slice and serve with the vegetables.

Enjoy your dinner as much as these two chicken-haters did. Don't feel too bad for the pup though. He did get some of the chicken.
