One Tray Sausage and Vegetables

This meal is so quick and easy. You pretty much just throw everything onto a tray and pop it in the oven. And it's done in less than half and hour.





You can use any type of sausage you want. I like to go for chicken sausage to avoid extra, unnecessary fat. I found an awesome apple and maple chicken sausage at Trader Joe's. The apple flavor went beautifully with the acorn squash.


The best part is that this meal produces three things to wash (excluding dinnerware). All it takes are a cutting board, a knife, and a baking tray.


Preheat oven to 475°F


Lay your acorn squash and onions on a rimmed baking sheet. (I usually line it with foil first to help with cleanup). Drizzle with the olive oil and sprinkle with the salt and pepper. Toss to combine and make sure that your squash is in a single layer.

Add the sausages on top.

Bake for 15-18 or until the vegetables are tender.

Heat the broiler and add the sage and Asiago cheese to the veggies and sausage. Broil for 3 or until the cheese is bubbly.

It also makes amazing leftovers when chopped up and put in an omelet.



One Tray Sausage and Vegetables

Ingredients

1 large acorn squash, halved, seeded, and cut into 1/2" slices
1 red onion, cut into 1/4" slices
3 Tbsp olive oil
1 Tbsp Kosher salt
1 1/2 teaspoons freshly ground pepper
16 oz package sausage
1/2 cup grated Asiago cheese (2 oz)
1 Tbsp chopped fresh sage leaves or 1 1/2 tsp dried sage

Directions

Preheat oven to 475°F

On a rimmed baking sheet, toss the squash and onion with the olive oil, salt, and pepper.

Place sausages on top.

Bake for about 15 to 18 minutes or until the vegetables are tender.

Heat the broiler and sprinkle the cheese and sage over the vegetables and sausage.

Broil for 3 minutes or until the cheese is browned and the sausages are heated through.
